Eu ando procurando receitas de lanches gostosos e saudáveis. Batatinhas assadas, chips de couve ou abobrinha, pipoca com ervinhas, patês de legumes ou verduras… Tenho quase uma coleção! Como eu me recuso a fritar, adapto as receitas tradicionais e faço tudo no forno.
O post de hoje é um bom exemplo. “Tater tots” são bolinhos de batata fritos muito comuns nos EUA. Mas como não são lá muito saudáveis, o mundo resolveu responder com tots (ou bolinhos) de couve-flor. Adaptei essa receita do blog Skinny Taste e assei essas belezinhas.
Usei o mesmo método de cozinhar a couve-flor da base da pizza. Ficaram lindos e deliciosos, olha!
Ingredientes:
- ½ couve-flor
- 1 ovo
- ½ cebola picada fininha
- 1 pitada de orégano
- 5 folhas de manjericão
- ½ xícara de queijo parmesão ralado
- ½ xícara de farinha de pão temperada (caso faça a farinha em casa, use 3 fatias de pão de forma ou um pão francês, 2 colheres de chá de alho torrado, 1 colher de chá de azeite e sal – veja o procedimento abaixo)
- Sal a gosto
- Azeite para untar
Ligue o forno a 180°C. Lave a couve-flor e corte-a em pedaços médios. Bata em um processador de alimentos ou liquidificador, até que os pedaços fiquem pequenos como grãos (caso só tenha o liquidificador, bata aos poucos e resista a tentação de usar água!).
Leve ao forno em um tabuleiro ou pirex, por 15 minutos.
Para fazer a farinha, leve o pão ao forno por alguns minutos e retire assim que ficar crocante. Bata em um processador ou liquidificador com um pouco de sal, azeite e o alho torrado. Essa é a sua farinha de pão temperada. Reserve.
Retire a couve-flor do forno e despeje em um pano de prato limpo. Junte as pontas e aperte, até que toda a água tenha escorrido (você vai precisar deixar esfriar um pouco antes de começar ou vai acabar queimando as mãos. Ai!).
Doure a cebola em uma frigideira. Junte com a couve-flor, o ovo, as ervas, o parmesão e a farinha de pão. Confira o tempero.
Faça bolinhos com a ajuda de uma colher. Você pode escolher o formato, essa parte é a mais divertida :-) Unte um tabuleiro com azeite e espalhe os bolinhos.
Asse por aproximadamente 20 minutos (se o seu forno for bom. Como sempre, o meu me fez esperar rs) virando cada um no meio do processo. Eles estão prontos quando estiverem dourados. Sirva-os ainda quentes! Eu, que ando viciada em mostarda, achei que combinou bastante.
Essa receita rende aproximadamente 20 bolinhos.

I have been looking for good recipes for tasty and healthy snacks. Baked potato wedges, kale or zucchini chips, herbed popcorn, vegetable spreads and dips… I have almost a collection! And as I refuse to deep fry anything, I always adapt any traditional recipe and bake it all up.
Today’s post is an example. “Tater tots” are fried potato cylinders and are everywhere in the US. But as they’re not at all healthy, the world responded to them with cauliflower tots. Baked ones, of course. I adapted this recipe from Skinny Taste.
I cooked the cauliflower the same way I did the pizza crust. The tots turned out cute and delicious, look!
Ingredients:
- ½ head of cauliflower
- 1 egg
- ½ onion – chopped finely
- 1 pinch of oregano
- 5 basil leaves
- ½ cup of parmesan cheese – grated
- ½ cup of seasoned breadcrumbs (in case you’re making yours at home, use 3 slices of bread, 2 tablespoons of toasted garlic, 1 teaspoon of olive oil and salt – see the procedure below)
- Salt to taste
- Olive oil – to grease
Turn the oven on at 180°C. Wash the cauliflower and chop it into medium sized florets. Blitz them on a food processor (or a blender. It takes a while, but it works, as long as you do it little by little. Do NOT use water). Stop when it has reached the size of rice. Bake for 15 minutes on a baking tray.
To make the crumbs, take the bread slices to the oven and remove them as soon as they get crispy. Blend them with salt, olive oil and toasted garlic. These are your seasoned breadcrumbs. Set aside.
Remove the cauliflower from the oven and dip it on a clean cloth. Hold the tips and squeeze, removing all the water (you’ll probably need to let it cool a bit before handling or you’ll burn your hands. Ouch!).
Cook the onion until golden. Mix it with the cauliflower, the egg, the herbs, the parmesan cheese and the breadcrumbs. Check the seasoning.
Make the tots using a spoon. You can the choose the size and shape, that’s the fun part :-) Grease a baking tray and spread the tots on top.
Bake for about 20 minutes (if your oven is good. As usual, mine made me wait much longer), turning upside down in the middle of the process. They’ll be ready when they turn golden. Serve them still hot. I’m currently addicted to mustard, so I dip them in it and liked the combo.
This recipe yields about 20 tots.
